Many people have asked me to post a couple recipies.  They are Breakfast To Go and Tomato Soup.

Breakfast To Go

1 cup of fat free milk

pinch of salt

1/2 cup of dry whole-wheat couscous (this is found with the dry rices in a box at the grocery store)

frozen mixed berries

vanilla yogurt

1. in a samll saucepan, bring milk and salt just to boiling.  Stir in couscous.  Remove from heat and let stand, covered, for 5 minutes.

2. Devide couscous among 6 plastic cups (or to-go containers with lids).  Top each with frozen berries and yogurt.  cover and chill overnight.  Makes 6 servings.

This are the BEST!  I make these the night before and the kids go in by themselves and get them and eat breakfast.  These are also great for when you have to eat breakfast in the car or you want a very healthy and balanced snack for your kids.  Give them a try!

Quick Tomato Soup

1/4 cup of butter

1/4 cup of flour

1 tsp. of Curry Powder

1/4 tsp. of Onion Powder

1 can or bottle of tomato juice (46 oz.)

1/4 cup of sugar

1. In a large sauce pan melt butter over med. heat, stir in flour with a metal wisk.  Add curry powder and onion powder.  Stir until smooth.  Gradually add tomato juice (about 1 cup at a time) and sugar.  Mix well between adding juice and make sure it gets thick.  Contniue to add juice until you have added it all. 

This is the BEST tomato soup I have ever had.  We sometimes have it with goldfish in it at lunch time or top with cheese, sour cream and tortilla chips for a mexican dinner.
